Steeping Tips:
For steeping the perfect cup of tea - Use one teaspoon of tea per every 8 oz. of water and add one for the pot! Steeping times:

White tea: 1 ½ minutes, in water at first boil (160 degrees F.), not a rolling boil which will force the leaves to give up their essence with high temperatures ending up with a bitter brew, or let water stand a moment until it stops bubbling.

Green tea: 3 - 3 ½ minutes, same boil method as white teas.

Oolongs: 3 ½ - 4 minutes, water at second boil (180-195 degrees), bubbles rising, on the verge of erupting

Black & Red & Herbal & Fruit Blend teas: 5 - 6 minutes, water at full rollicking boil.

DRAGONWELL Lung Ching
Dragonwell, a Chinese green tea, distinguished by its beautiful shape, emerald colour, scented smell and tending sweet floral character. Legend has it that in 250 AD a Taoist monk affirmed that there must be a dragon lurking in a certain spring not far from Hangchow. The monk implored the well dragon to rescue the farmers from a drought. Instantly, poured forth a timely rain. One account of this, an old temple adjoining the spring is known as Dragon’s Well Monastery, and this tea derives its name from the same legend. Produced by hand through a 10-part process.

CACTUS BLOSSOM
An outstanding China green tea with cactus and cactus blossoms. A sophisticated palette pleaser and crowd pleaser.

GUNPOWDER
A dark Chinese green tea with surprising body and captivating taste. Legend has it that the name was given by a English clerk who thought the tiny rolled green nuggets looked like gunpowder. Pellets open like little flowers! (agony of the leaf).

GENMAICHA
Green Japanese tea with light brownish yellow liquor with toasty flavour, tending sweet and bright with roasted rice kernels. This is a specialty Japanese green tea (sencha) that is blended with fire-toasted rice. The fresh vegetative character of the green tea is imparted on the cup but it is tempered with the bakey-like character of the rice. There is a natural sweetness and almost chewy character to the finish of this tea. During the firing of the rice, it is not uncommon for rice to ‘pop’ not unlike popcorn, hence the pet name ‘popcorn-tea’.

SENCHA
Greenish, fresh taste tea with a vegetal note, drink as is or with a sweetner, most popular tea in Japan.

In a study published by Nature Structural & Molecular Biology, researchers state that a powerful antioxidant in green tea known as EGCG binds to protein found on tumor cells and dramatically slows their growth

SPECIALTY GREEN TEA:

MATCHA LATTE
(Ceremonial grade Gyokuro) Tea leaves themselves are imbibed. For a high concentration of vitamins and antioxidants enjoy a MATCHA LATTE, prepared with a taste of honey and (optional) milk (recent research indicates that milk negates the health properties of tea). Specify hot or cold. Sultry sweet notes peek from deep full flavored pure Gyokuro leaves. Lively and thick with a bright emerald green infusion.

Gyokuro leaves are a variety of Japanese tea bush that is shaded beneath special mats for 3 weeks before plucking. The shading forces the plants to produce a higher than normal chlorophyll content and gives the leaves a rich green color.

Matcha is finely powdered and looks like an emerald colored flour. Matcha is whisked into a frothy concoction. TEMPLES of KYOTO
A green and black Japanese tea blend with pineapple bits, papaya bits, marigold blossoms, kiwi bits, flavouring, safflower and cornflower blossoms. Visions of temples, ninga castles and pavilions of gold and silver are encountered in this beautiful land of Japan. With ancient rituals and ceremonies, it is located on the big central island Honshu, the cultural center of Japan also known for their Japanese Gardens.

FRENCH BLEND
Ooh-la-la flavor notes from the “crème de la vanille” blended with flavory Ceylons, pungent Assams and malty Kenyas. Flowery character, exceptional and rich – like a brocade at Versailles; rare black tea with green tea, rose petals, lavender and jasmine - a tea fit for the Latin Quarter along the Seine! Tea became the fashionable beverage in French society toward the end of the reign of Louis XIV. Alzheimer’s is associated with a reduced level of the chemical acetylcholine in the brain. In lab tests in Newcastle (UK) researchers found that both black and green tea inhibited the activity of acetylcholinesterase which breaks down this key chemical

Oolong Teas are “brown” teas semi-fermented between a green tea and black tea and hence the most complex of teas to produce.

BLACK TEA

Black tea goes through four stages of production – withering, rolling, oxidation and drying/firing. The hearty, rich flavor comes from the fermentation or oxidation and firing. Black tea has the most caffeine, but half the amount of a cup of coffee.

A black tea with hints of maple and strawberry combined with flavory Ceylon and malty Assam black tea and petals of white daisy gives a round full cup of bright coppery colour. Tea became a colonial staple and was not confined to the affluent; it was considered a healthy beverage, a sign of good manners and expected hospitality. The Boston Tea Party was a trigger for the American Revolution on December 16, 1773. During the tea boycott the colonists boiled pine needles, strawberry leaves, maple leaves and shrubs to stem their thirst for tea. This tea captures the spirit of the revolution. Boston isn’t the only place for a tea party! The Boston Tea Party Re-enactment, an event at Vianne’s, inquire! “Boston Harbor a teapot tonight!” Patriots cried out at the Old South Meeting House.

IRISH BREAKFAST
A stout robust blend, superb colour and full-bodied tea. This high quality grade from Assam and Kenya is CTC - cut, torn and curled. A machine produces these tiny balls of tea. This “mash” ferments quickly after firing to lock in flavor and upon infusion release the full flavor due to the increased surface area. For the luck of the Irish, indulge upon awakening. ENGLISH EARL GREY
With Oil of Bergamot – a perfume and distinctive taste from the bergamot tree (citrus bergamia), which produces a small citrus fruit. The rind yields the oily essence added during processing. Tales tell how a British diplomat on a mission to China saved the life of a Mandarin and as a gift of gratitude was given the recipe for this flavored tea. This diplomat upon his return to Britain presented the tea to the Prime Minister of the day, Earl Grey (1830-1834) who made this tea fashionable.

RASPBERRY EARL GREY
With Oil of Bergamot. A wonderful aromatic black tea with raspberry and strawberry bits fit for all ladies, gentlemen and scholars alike!

BARONESS GREY
Lively Earl Grey notes accented with black tea, dried orange and piquant lemon, daisy white, rose and cornflower petals, cinnamon pieces. British legend has it that this Baroness of Grey, who lived in the 16th century, was married to a Ship's Captain in the Royal Navy whose ship never returned from a trading voyage to China. The Baroness walked to the port every morning hoping for news of her husband.

EARL GREY CREAM
A remarkably heady Earl Grey tempered with wickedly delicious cream flavour. Harkens back to the days when tea laden clipper ships raced to London.

VICTORIAN EARL GREY

A little tea if you please." - Jane Austen (1775–1817), EMMA JANE AUSTEN FESTIVAL held each Spring. www.janeaustenfestival.org In the 1600’s tea was regularly smuggled into Britain to avoid heavy taxation. The complex network of smuggling often began in Holland and France. By the late 1700’s the smuggling (tea) trade was thought to be as large as the legal trade.

THE CONQUERER

JOSEPHINE’S WHITE CHOCOLATE
A black tea with an exquisite sweet white French chocolate bakiness that explodes at the first sip, tidbits of cocoa meander throughout - velvety, enjoyed at the intellectual salons of Paris!

PU-ERH (Young PU-ERH)
An earthly and acquired taste Chinese tea. Known in the Far East for its medicinal properties, Pu-erh tea (named after a town in the south), the not "fully" dried black tea is left in a naturally controlled temperature (i.e. in a cave) for 7-14 days, sometimes much longer, so that the naturally present bacteria can slowly react with the air/moisture to attain the earthy pu-erh character. The tea is often compressed into the cakes - although sometimes left "loose" depending on the market.

CZAR NICHOLAS RUSSIAN CARAVAN
Lively and sprightly, exceptional and rare black tea with toasty, smokey pine notes from the hint of Lapsang. During the Czar’s time tea was the most important drink after vodka. The tradition continues.
In the city of Xian in central China historical markers acknowledge the beginning of the Silk Road - the trail that lead to central Asia (areas such as the Caucuses and the Black Sea). Tea was one of the commodities taken along the Silk Road. In the days of the camel trains across Asia, Lapsang Souchong absorbed smoke from evening campfires or from the camels themselves. This tea is mysterious and unique from the plains of Asia to the opulent courts of St. Petersburg.

LAPSANG SOUCHONG
An ancient and much loved unique tea from China, from the Fujian province, black tea smoked with essence of pine. A crisp, masculine tea with depth and character – with a very smoky flavor, grand with a sugar cube! Pairs well with spicy foods or as a marinade.

EMPRESS ALEXANDRA
A blend of Assam, Java and Ceylon teas with a malty-spicy taste and a dark copper finish – a perfect black tea for masked balls in the Winter Palace and samovars in other royal residences of Imperial Russia!

CATHERINE THE GREAT
Mango, passion fruit, Ceylon, South India and China black tea, flavoring, marigold blossoms, cornflower blossoms, safflowers. A distinguished tea reminiscent of the Golden age of Catherine the Great!
In Russia, the term for “tip” is “na chai”, translated as “for a cup of tea”. A samovar is a cauldron not a teapot, some samovars have a mini tea pot on top. Samovars are usually placed in the main room of the house keeping water hot - to be used at a moment’s notice to make a cup of tea for warming the body from the blistering cold.

Chai is the Indian word for Tea!

RED TEAS
Rooibos – pronounced “Roy-boss” commonly called “red tea” or “red bush tea” is from the “Aspalathus Linearis” plant. It makes an aromatic tea. Rooibos is grown successfully only in Cedarburg, just north of Capetown in South Africa. Naturally NO CAFFEINE!

Red tea, nothing added just the needle-like leaves of the plant - for purists!

AFRICAN OUTBACK
An outstanding herbal tea of Lemon Myrtle and Rooibos. Lemon myrtle has been touted as an anti-viral; it is also the most lemony plant that exists on this planet – reaching a 97% on the citrus scale!

YERBA MATE (also known as MATE)
New healthy trend in tea! It’s unique sustaining energy comes from the combination of caffeine and nutrients. Yerba Mate contains 24 minerals and vitamins, 15 amino acids, abundant antioxidants and naturally occurring caffeine. It stimulates focus and clarity. Mate is a bitter and grassy South American herb that originated in Argentina. It is very popular and enjoyed as a traditional social activity throughout Latin American countries including Uruguay, Paraguay and southern Brazil. The name "Mate" derives from the quichua word "mati" that names the gourd that is traditionally used to drink the infusion and it is slurped through a stainless steel straw called a bombillia. TEA BRICKS
The way tea traveled in ancient times! It was used as a monetary currency and even scored on the back to make change. The front was usually pressed with the insignia of the tea manufacturer. Green tea bricks are from April/May production time from Mt. Lushan region of Hubei Province. Mainly a ‘conversation piece” tea is best shaved off with a cheese grater for steeping!

JASMINE DRAGON TEARS
Smooth with delicate tea flavor and heavenly Jasmine notes. 7 tears in a cup reward the connoisseur with a lifetime tea memory. China green tea for Dragon Tears comes from the first 3 weeks of the new season growth (March) The delicate leaves are then hand rolled into small pearls. When infused, you will see the top two leaves and the bud come to life. You may see the “hairy down” on the bud, indicating superb quality, Coinciding with new tea growth are Jasmine bushes in spring bloom, only the most fragrant are plucked within one hour of sunrise and are layered between the tea giving an intense and uplifting fragrance.
