For steeping the perfect cup of tea – Use one teaspoon of tea per every 8 oz. of water and add one for the pot! Steeping times:
White tea: 1-2 minutes, in water at first boil (160 degrees F.), not a rolling boil which will force the leaves to give up their essence with high temperatures ending up with a bitter brew; or let water stand a moment until it stops bubbling.
Green tea: 3 – 4 minutes, same boil method as white teas.
Oolongs: 4 – 5 minutes, water at second boil (180-195 degrees), bubbles rising, on the verge of erupting
Black, Red, Herbal & Fruit Blend teas: 5-6 minutes, water at full rollicking boil.
White teas are named for the silvery white down that is on the small young leaves when they are plucked not for the cup color.

Dragonwell, a Chinese green tea, distinguished by its beautiful shape, emerald colour, scented smell and tending sweet floral character. Legend has it that in 250 AD a Taoist monk affirmed that there must be a dragon lurking in a spring not far from Hangchow. The monk implored the well dragon to rescue the farmers from a drought. Instantly, poured forth a timely rain. An old temple adjoining the spring is known as Dragon’s Well Monastery, thus the tea derives its name. Produced by hand through a 10-part process.
GUNPOWDER
A dark Chinese green tea with surprising body and captivating taste. Legend has it that the name was given by an English clerk who thought the rolled green nuggets looked like gunpowder. Pellets open like tiny flowers! (agony of the leaf). More information pg 25.
GENMAICHA
Green Japanese tea with light brownish yellow liquor with toasty flavour, tending sweet and bright with roasted rice kernels. This is a specialty Japanese green tea (sencha) that is blended with fire-toasted rice. The fresh vegetative character of the green tea is imparted on the cup but it is tempered with the bakey-like character of the rice. There is a natural sweetness and almost chewy character to the finish of this tea. During the firing of the rice, it is not uncommon for rice to ‘pop’ not unlike popcorn, hence the pet name ‘popcorn-tea’. Read about the Legend of Genmaicha on page 25.
SENCHA
Greenish, fresh taste tea with a vegetal note, drink as is or with a sweetner, most popular tea in Japan.
In a study published by Nature Structural & Molecular Biology, researchers state that a powerful antioxidant in green tea known as EGCG binds to protein found on tumor cells and dramatically slows their growth.
MATCHA LATTE
(Ceremonial grade Gyokuro) Tea leaves themselves are imbibed. For a high concentration of vitamins and antioxidants enjoy a MATCHA LATTE, prepared with a taste of honey and (optional) milk (recent research indicates that milk negates the health properties of tea). Gyokuro leaves are a variety of Japanese tea bush that is shaded beneath special mats or bamboo for 3 weeks before plucking. The shading forces the plants to produce a higher than normal chlorophyll content and gives the leaves a rich green color.
Matcha is finely powdered and looks like an emerald colored flour. Matcha is whisked into a frothy concoction. Matcha contains higher concentrations of vitamins and antioxidants – nearly 10 times the polyphenols and antioxidants of regular teas, 2 times the antioxidants of a glass of red wine, approximately 9 times the beta-carotene of spinach, and 4 times that of carrots.

Alzheimer’s is associated with a reduced level of the chemical acetylcholine in the brain. In lab tests in Newcastle (UK) researchers found that both black and green tea inhibited the activity of acetylcholinesterase which breaks down this key chemical.

The Boston Tea Party was a trigger for the American Revolution on December 16, 1773. During the tea boycott the colonists boiled pine needles, strawberry leaves, maple leaves and shrubs to stem their thirst for tea. This tea captures the spirit of the revolution. Tales tell how a British diplomat on a mission to China saved the life of a Mandarin and as a gift of gratitude was given the recipe for this flavored tea. This diplomat upon his return to Britain presented the tea to the Prime Minister of the day, Earl Grey (1830-1834) who made this tea fashionable.

PU-ERH (Young PU-ERH)
An earthly and acquired taste Chinese tea. Known in the Far East for its medicinal properties, Pu-erh tea (named after a town in the south), the not “fully” dried black tea is left in a naturally controlled temperature (i.e. in a cave) for 7-14 days, sometimes much longer, so that the naturally present bacteria can slowly react with the air/moisture to attain the earthy pu-erh character. The tea is often compressed into the cakes – although sometimes left “loose” depending on the market.
CZAR NICHOLAS RUSSIAN CARAVAN
Lively and sprightly, exceptional and rare black tea with toasty, smokey pine notes from the hint of Lapsang. During the Czar’s time tea was the most important drink after vodka. The tradition continues.
In the city of Xian in central China historical markers acknowledge the beginning of the Silk Road – the trail that lead to central Asia (areas such as the Caucuses and the Black Sea). Tea was one of the commodities taken along the Silk Road. In the days of the camel trains across Asia, Lapsang Souchong absorbed smoke from evening campfires or from the camels themselves. This tea is mysterious and unique from the plains of Asia to the opulent courts of St. Petersburg.

In Russia, the term for “tip” is “na chai”, translated as “for a cup of tea”. A samovar is a cauldron not a teapot, some samovars have a mini tea pot on top. Stunning gardens are along southern France’s Cote D’Azur. Most famous is of the impressionist Renoir at his former home in Cagnes sur Mer outside Nice. A visit to Renoir’s is like visiting heaven. Olive trees and butterflies flit and float above beds of flowers, basking in the warm sun – like paradise. A tea artisan looking for inspiration attempted a reproduction. Selecting a palette, amaranth and marigold blossoms were tied into a tightly wrapped ball of wiry leafed green tea.
